Stuffed Shells Recipe

I thought it was important to start sharing some of my favorite frugal and easy recipes.  I started making this one when I signed up for Weight Watchers online years ago.  It’s still one of our favorite recipes and you couldn’t get much easier!

If you purchase your ingredients on sale and use coupons if available, this recipe should cost you about $7-$8 (this could go up if you can’t find ricotta cheese on sale or it could be lower if you find great sales/coupons!). This feeds the two of us for 2 nice sized dinners.


16 ounce part-skim ricotta cheese (sometimes this is 15 ounces and that works fine)
16 ounce fat free cottage cheese
3 cups tomato sauce (or to taste)
1 package jumbo shells
season to taste – salt, pepper, oregano

Preheat oven to 375 degrees. Mix together cheeses and seasonings. Spread a few spoonfuls of sauce on the bottom of a 9×13 casserole dish. Boil water and cook shells. When shells are cool enough to handle, fill each with cheese mixture and place in dish, spooning remaining sauce over shells. I usually will also sprinkle some parmesan cheese over the shells before baking. Cover pan and bake for 20 minutes. A serving is 4 shells which equals 4 points – only 1 point per shell!
